Protein Banana Bread Bars

This recipe goes to Nutrition in the Kitch! My girl Kelly found it and I have been making it ever since. I made a few adjustments to it and didn’t make the Cashew Cream Frosting which you can get from the link above. It is super moist and you can have more than just one piece for breakfast or one piece for a snack! Well, that’s what I do to fit into my macros. The details of calories/macro count is below too. Enjoy!

  • 2 ripe bananas

  • 3/4 cup oat flour (I ground 3/4 cup rolled oats in my blender to make the flour)

  • 6 packets stevia

  • 1 tsp baking soda

  • 1/4 tsp salt

  • 3 scoops Vanilla protein powder ( I use Wholefoods 365 grass fed whey protein)

  • 2 - 5 oz containers of Chobani less sugar Madagascar vanilla greek yogurt - or 1 cup plain yogurt

  • 1/3 cup egg whites

  • 2 tsp vanilla extract

Preheat oven to 375.

Mash bananas in a medium size bowls then add all other ingredients. Mix well and pour into a 9x9x2 square baking dish. Bake for approximately 30 minutes or until toothpick or knife comes out clean when you test the middle.
