Tuna Tartar
Ingredients:
2 pounds very fresh tuna steak
1/4 cups olive oil
3 Medium Granny Smith Apples
1/4 cups minced scallions, white and green parts
1/4 cup freshly squeezed lime juice
1 teaspoon wasabi powder
2 1/2 tablespoons soy sauce
2 tablespoons hot red pepper sauce ( I use sriracha)
kosher salt & pepper to taste
3 Ripe Avocados
Sesame seeds
Sprouts
Serve with:
Pickled Ginger
Wasabi
Seweed salad
Wonton Strips
Directions
Cut the tuna into 1/4-inch dice and place it in a very large bowl. In a separate bowl, combine the olive oil, lime zest, lime juice, wasabi, soy sauce, hot red pepper sauce, salt, and pepper. Pour over the tuna, add the scallions and Apples, and mix well. Allow the mixture to sit in the refrigerator for at least 1 hour for the flavors to blend.
Cut the avocados into 1/4-inch dice.
To build the tower use a tall circle mold ( you can find them in any kitchen store), spoon in tuna, then a layer of avocado, then more tuna, then another layer of avocado. Carefully, turn the mold upside down onto the plate and lift. The Tuna will not stick because of its oil. Sprinkle the top with sesame seeds and top with sprouts!
