Protein Pasta with Peanut Sauce

This pasta... is OHH so good! You deff have to give it a try this week! It is sooo easy to make and takes less than 30 minutes!

Here is the recipe for 1 serving!

⠀⠀⠀⠀⠀⠀⠀⠀⠀

What you’ll need:

2 oz red lentil pasta

1 tablespoon peanut butter

3/4 tablespoon of low sodium soy sauce

1/2 tablespoon fresh ginger - grated

1/2 tablespoon pure maple syrup

1 cloves of garlic

6 oz frozen stir fry vegetable mix

Dash of red pepper flakes - optional

Sea salt

Scallions for garnish

Directions:

1) Make the peanut sauce

In a saucepan over medium-low heat, combine peanut butter, soy sauce, ginger, maple syrup, garlic, and 1/4 cup of water. Stir continuously until the mixture is thoroughly heated. About 5-7 minutes

2) Meanwhile, cook the noodles according to package instructions. Drain and return to pot. Cover to keep warm.

3) Finish the peanut sauce

Add frozen vegetables & pepper flakes (if using) to the peanut sauce. Cook unti the vegetables are heated through, about 5 minutes. Season with salt to taste.

4) Assemble & serve

Add the peanut sauce and vegetables to the noodles. Using tongs toss well to coat. Add scallions and serve immediately.
