Protein Pancakes
Good morning!
There is nothing like pancakes for breakfast! When I started learning about eating clean back 15+ years ago, I learned how important eating the right foods can really keep our bodies healthy. Even when I had cancer the Drs said I was the healthiest cancer patient they had. That said how do you make pancakes healthy because let’s face it they are life!
There are a couple of ways I make my pancakes. One is a recipe homemade and now with more people wanting healthier high protein options there is a pancake mix I use. Here is the link to Stacked pancakes. I have tried their Buttermilk, Pumpkin, Coconut and Lemon, those are all my favorites AND I add 1/2 cup of Wild Blueberries to them. The benefits of wild blueberries are amazing I will write a blog about that later. They have 25 grams of protein in each serving so they are really good when you are trying to hit your macro goals, again something I will write about later because following my macros has truly helped me drop the last of the weight and maintain without feeling deprived.
This recipe is my other go to one when I want a more dense pancake:
1/2 cup rolled oats
2 egg whites
1/4 cup low fat cottage cheese
dash of cinnamon
Blend together in the blender, Fold in fruit of your choice. Spray small round frying pan with nonstick spray and cook like a pan, flipping when middle starts to bubble.
